Ingredients

  • 1 tin chickpeas drained
  • 1 Chopped Onion
  • 2 Cups Squash diced
  • 2 tsp olive oil
  • 1 clove minced garlic
  • 200g low fat feta
  • 30g pine nuts
  • 1/2 bag spinach
  • 1/2 bag rocket¬†

Instructions

Step 1

Roast the chickpeas, squash and onions in oven with olive oil and garlic

Step 2

In a salad dish, toss your spinach, rocket, crumbled feta & pine nuts

Step 3

Once veg is cooked, let cool and toss into the salad,
